Many people are mystified by how to prepare both eggplant and tofu. This recipe is simple, easy to prepare, economical and above all… delicious!
Caponata con triángulos de tofu – Caponata with Tofu Triangles
Caponata de berenjena
- 3-4 berenjenas, peladas y cortadas en cuadritos // eggplants, peeled and chopped into 1″ squares
- 6-8 tomates para cocinar, cortados en cuadritos // small tomatoes, chopped into 1″ squares
- 4 cucharadas de pasta de tomate // tablespoons tomato paste
- 4 dientes de ajo, picado fino // cloves of garlic, finely chopped
- 3 cucharadas de aceite de oliva // tablespoons of olive oil
- 1 cucharada de vinagre, preferiblemente balsamico o de vino rojo // tablespoons vinager, preferably balsamic or red wine
- 4 cucharadas de alcaparras o aceitunas verdes picadas (opcional) // tablespoons capers or chopped green olives (optional)
- Sal // Salt
- Albahaca fresca o seca // Fresh or dried basil
Poner las berenjenas en un colador con sal para que suelte su jugo amargo. Dejar una media hora. Enjuagar y secar con toalla limpia las berenjenas. Si tiene una canasta para cocinar al vapor, cocine las berenjenas de esta forma durante 10-15 minutos. De no tenerla, echar media taza de agua en una cacerola grande con tapa para cocinar la berenjena al vapor, durante 10-15 minutos. Escurrir la berenjena.
Poner a sofreir el ajo en el aceite de oliva. Agregar pasta de tomate y tomates, dejar cocinar durante 2 minutos. Agregar la berenjena, vinagre y las alcaparras o aceitunas (opcionales). Revolver y poner sal al gusto. Listo! La caponata es rica caliente, y también al tiempo o el día después de prepararla.
Place the eggplant in a colandar with salt so that it releases its bitter juices, leave for a half an hour. Rinse and dry the eggplant with a clean towel. If you have a steaming basket, steam the eggplant for 10-15 minutes. If you do not have a steaming basket, cook eggplant in a large pot a lid in a half a cup of water so that it steams for about 10-15 minutes. Drain the eggplant.
Sautée the garlic in the olive oil. Add the tomato paste and tomatoes, cook for 2 minutes. Add the eggplant, vinegar and optional capers or olives. Mix together and add salt to taste. Caponata is great hot, as well as at room temperature and especially the next day.
Triángulos de tofu
El tofu de la marca Nutrem se vende en un bloque de una libra y viene empacado en agua. Sacar el bloque de tofu con cuidado para que no se quiebre. Cortar en cinco partes sobre el lado ancho, después cortar cada pedazo en cuatro, en forma de triángulo. Poner todos los triángulos sobre una toalla limpia seca, tapar con la toalla, y secar.
En una paila de teflón (nonstick), añadir una cucharada aceite de oliva u otro aceite vegetal y sofreir el tofu hasta que se dore a los dos lados. Servir los triángulos de tofu con la caponata encima, regar con albahaca.
The Nutrem brand of firm tofu comes in a one pound block, packed in water. Take the block of tofu out of the bag carefully so as not to break it. Cut the block into 5 slabs along the wider side of the block, then cut each slab into four triangles. Place the triangles between a clean towel and dry.
In a nonstick pan, add a tablespoon of olive oil or other vegetable oil, and sautée the tofu until it is golden on both sides. Serve the tofu triangles with caponata on top, and sprinkle with basil.
